Goes with Paella del Mar, BBQ chicken with fresh coriander salsa verde, smoked salmon and brie fritatta. Fiction, fantasy and a little romance.

The winemaking process of Innocent Bystander Chardonnay 2023 commenced with the harvest taking place early March 2023. The grapes underwent a gentle pressing, extracting only the free run juice. Approximately 40% of the wine was matured in oak barrels on lees for around 9 months. The fermentation process involved a partial use of indigenous yeasts in both new and seasoned oak barrels. Monthly stirring of the lees continued until winter. To preserve its freshness and natural acidity, no malolactic fermentation took place.

Peak Drinking

Can be cellared up to 5 years.

Growing Conditions

2023 was a low yielding vintage with consistant rainfall throughout. Finally in March the sun came out witch delivered ripe and flavoursome Chardonnay with excellent natural acidity.
