The winemaking process of commenced with the harvest taking place in March of 2022. The grapes underwent a gentle pressing, extracting only the free run juice. Approximately 50% of the wine was matured in oak barrels on lees for around 9 months. The fermentation process involved a partial use of indigenous yeasts in both new and seasoned oak barrels while being stirred minimally. To preserve its freshness and natural acidity, no malolactic fermentation took place.
