A cool, elegant and refined white wine with complex flavours of bright stone fruits, and hints of citrus. This Limited Release Chardonnay will gain further depth and complexity with cellaring for up to years from vintage.

Food Pairings

The Limited Release Chardonnay pairs beautifully with white fish like Blue Grenadier or Snapper, as well as smoked trout. Try it with a smoked trout risotto and wild mushrooms, or snack on ripe camembert and crunchy green apple.

Various winemaking techniques have contributed to the intricate aromas and flavours of this refined Chardonnay. A portion of the wine underwent fermentation with natural yeast, enhancing its texture and complexity. Full malolactic fermentation was employed to balance the wine's high natural acidity and impart a creamy texture. The wine was barrel fermented, spending 11 months in oak, with 28% of the barrels being new. Regular stirring of the lees in the barrels helped develop a richer mouthfeel. The wine was bottled with a pH of 3.21 and acid level of 6.36 g/L. Vegan-friendly.

Growing ConditionsThe grapes for this wine were grown at two vineyards in the Tamar Valley of northern Tasmania. The fruit was harvested from mid-March to mid-April at baumé levels ranging 12.5 to 13.5.
