Made with premium parcels of fruit from our Hazards vineyard, the Resolution Pinot Noir displays vibrant cherry, red berry and subtle spice aromas combined with a savoury, balanced, and lingering palate.
A Pinot Noir with this intensity and concentration screams out for quality food accompaniments. Chargrilled lamb cutlets marinated in a chimichurri and served with bok choy, or, a whole roasted duck, Mediterranean vegetables and a deep red wine jus.
The fruit was cold soaked and plunged twice a day until ferment was started to gain lengthy tannins. The wild yeast ferment was completed with partial whole bunches to add texture and complexity. The wine was matured in French oak barriques, 15% new, and a range of vegan friendly fining agents was added to make this supple and savoury delight with great integration of tannins and persistence of flavour.
