The fruit was harvested and loaded directly to the press with initial oxidative handling to achieve a vibrant white wine colour and avoid any pink hues. It was then racked and fermented in tank under protective conditions and cool temperature to preserve aromatic qualities. There was also a shiort period of partial lees contact and stirring in tank to aid in mouth feel and complexity.
