Food Pairings

This flavoursome pinot noir makes a versatile accompaniment to a great variety of foods. It would be delightful with roasted duck breast, a light red wine jus and steamed greens. It is also fantastic with Comte cheese and seeded crackers.

    Sourced from the Kayena vineyard in the Tamar Valley, 20% whole bunches, 19% new French oak. Bright ruby in the glass with lifted red cherry, raspberry and blueberry fruit tones with hints of fine spice, mountain herbs, wildflowers, undergrowth and roasting meats. Red fruited on the palate with oodles of spice, light game and herbal nuance. Bright acidity pulsing throughout, fine, chalky tannins and a distinctly elegant finish. Delicious.

    Ruby in the glass with aromas of dark cherry, wild strawberry and some raspberry top notes with an understorey of exotic spice, leaf litter, shiitake, pomegranate, amaro herbs, dam earth, dried citrus rind and clover blossom. Willowy and lithe with some sour cherry twang, tannins chalky-fine and some apple sorbet to the acid line, finishing slinky and long, with just a dusting of gamey tones on those cherry fruits.

The majority of this wine was destemmed into small open top stainless steel fermenters. Here the fruit was cold soaked for 5 days, before natural yeast start fermentation. Ferments are run up to 30 degrees and pump overs carried out up to four times per day. Approximately 10% of the ferments were completed with whole bunches. The skins are separated using a French basket press, and after 48 hours settling they are run to French oak barriques for maturation. In Spring the barrels warm up and go through Malolactic fermentation. After 11 months in barrel, each individual block is sampled and only the best are identified, blending is then undertaken in the winery, and the three clones chosen in 2021 were D4V2 and 115.

This pinot noir is crimson red with hints of purple.

Aroma

Strong aromas of raspberry and blueberry dominate against a background layer of cinnamon and some savoury/meaty characters that will develop over time.

Palate

Mouth-filling flavours of red berries are balanced by a good concentration of soft, silky tannins and enough acidity to give definition to a long and persistent finish.

Peak Drinking

The wine is drinking well now and with careful cellaring will develop more complex and savoury characters over time in bottle. Can be cellared for 6 to 8 years from vintage.

Growing Conditions

The climatic conditions ranged from 12.9°C to 20.3°C, creating an ideal environment for grape growth. This vintage was produced using Clone vines 115 and DV42, thriving at an altitude of 10 to 30 meters. The grapes were carefully harvested within a narrow window from March 29th to April 1st, 2021, showcasing baume levels between 12.5 and 13.5, resulting in a promising and potentially exceptional vintage.
