Nicole Bilson - Winepilot • 17/01/2024This cool climate Tasmanian sparkling is a blend of the premium Champagne varieties, Chardonnay (51%) and Pinot Noir (49%), made using traditional method and aged for three years on lees. The aromas open with orange blossom and lemon zest – fragrant and invigorating – before revealing the minerality of a sea breeze, as the cool afternoon change comes in. The gentle ageing contributes almond shortbread and hint of ripe, creamy brie. In the mouth it is elegant and precise with lively sherbetty acidity. A whisper of chalky texture with pure grapefruit and white strawberry flavours linger through a long mouthwatering finish. An exceptional wine that redefines what Tasmanian sparkling is capable of.
The wine was made in strict adherence to the traditional method techniques with 100% of the wine undergoing malo lactic fermentation, and a long, slow secondary fermentation in the bottle. It spent 3 years resting on lees prior to disgorging and dosage.

Growing Conditions | The grapes used to make this wine were grown in the cool-climate vineyards of northern Tasmania. The wine is a blend of Chardonnay 51% and Pinot Noir 49%. The grapes were handpicked and whole-bunch pressed with the fruit harvested from early March to late March 2019. |
