This Blanc de Blancs uses 100% Chardonnay grapes handpicked from the cool climate Tasmanian vineyards. The colour is a bright hue with a fine persistent bead. The nose is lifted with sour dough bread and citrus overtones. It also shows an elegant yeasty flavour from the time on lees. These characters follow through to the palate which offers a creamy mouth feel and crisp, fresh finish.

Pale straw with an energetic bead and mousse. Aromas of lemon, grapefruit, white peach and green apples with hints of clover blossom and meadow flowers, petrichor, crushed sea shells, sourdough starter, mushroom broth, fresh pastries, crème fraîche and lemon curd. Elegant and expansive on the palate with a detailed flow of pure citrus and apple fruits, a fine mineral cadence, perfectly simpatico autolysis tones and a stony, dry finish with ample drive and tension.
