Sushi and Sashimi. Char siu pork and noodle salad. Triple cream brie with watermelon carpaccio.
6 hours skin contact to aid colour retention. Small addition watermelon flavour. Fruit is chilled and crushed with a long slow ferment. 100% stainless steel ferment. Charmat tank ferment to retain bubbles. Chilled, filtered and immediately bottled at 0°.
