The winemaking process of this Prosecco begins with the gentle pressing of the grapes, directing the juice to stainless steel tanks for a long and cool fermentation. During this time, the wine is aged on yeast lees, adding complexity and depth to its character. Natural carbonation is achieved through the Charmat fermentation method, ensuring the presence of lively bubbles. This Prosecco can be cellared for up to 3 years, allowing it to develop further complexity over time.

Growing Conditions

The Prosecco grapes thrive in growing conditions that mimic the climate of their traditional home in Veneto. With long, warm summer days and cool nights, the vines benefit from optimal temperature variations. The fruit for this Prosecco comes primarily from vineyards in the King Valley region of Victoria, along with other carefully selected vineyards. Harvesting takes place during the coolness of the night, when the grapes are at their optimal ripeness. Machine picking ensures efficiency and preserves the quality of the fruit. The harvest period extends from February to early April, with Baume levels ranging from 9.5 to 11, indicating the desired sugar content in the grapes. These favourable growing conditions contribute to the vibrant and expressive character of the Prosecco wine.
