The Patricia Cabernet Sauvignon is an inky dark purple colour with rich aromas of blackcurrant and dried herbs, while the French oak influence offers a gentle ‘cigar box lift’ to the nose. On the palate the wine has powerful dark berry fruit, spice and hints of nutmeg.
Pair this bold red wine with slow-cooked lamb shoulder accompanied by Mediterranean vegetables and a flavoursome juniper berry sauce. For a delightful finish to a meal, it also complements a selection of aged Parmesan and Pecorino cheeses.

Fruit for the 2021 Patricia Cabernet Sauvignon was sourced from several vineyards in Victoria. The King Valley makes up 50%, along with Bendigo 36%, and Yarra Valley 14% to round out the blend of outstanding vineyards. The fruit was harvested in late March 2021 at a baumé level of 12.7 to 13.1. The wine was destemmed and crushed to open top fermenters in the Kindergarten Winery. The wine spent 18 months in 40% new, and the balance in older French oak barriques. A number of blending trials took place to produce a very intense and powerful wine from low yielding vines. The wine was bottled with an alcohol of 13.5%.

Growing Conditions | The 2021 vintage was the first rain affected season for some vintages. In the spring of 2020, the conditions led to good fruit set, uniform ripening all be it with relative low yields. The below average ripening temperatures led to slow development and flavour ripeness at lower potential alcohol. This led to expressive dark berry fruit flavours with fantastic balance. |
